From harvest time until December the winery is buzzing with activity. With fermentation come gurgling sounds, high temperatures… and always excitement.
Each grape variety is kept in a different tank and is nurtured on the basis of daily tastings.
After Christmas comes the magical time of the “assemblage” where we try to arrive at the best combination of grapes to produce the type of wine we want to make. The magic is that year after year the final blends which will become either “Les Gentilles Pierres” or “Nuance de Cocagne” are seldom the ones we imagined before tasting.
The resultant « cuvées » will then spend either two winters in a tank or one year in oak barrels.
During this maturing period, the wines are checked regularly by tasting and analysis.
Bottling generates a revival of activity in the winery.
The whites (dry & sweet) and the rosé are bottled as early as possible to preserve their aroma and freshness, while the new vintages of red are bottled later, before the first heat of spring.
Once the bottling is over, calm reigns again until the next harvest. And we start all over again…
